One of the best degustation menus I’ve ever had. A wild ride of flavour, texture, fun playful eating experiences from cracking the crackers to reveal a wondrous crab jackfruit caviar surprise to memories of a traditional Japanese breakfast with the whole chicken dish. Each had its own surprise to share carrying mountain to ocean stories, to friends of home grown wild rice, produce and hand raised beef from their paddock.
The staff were exceptional, tending to every slight head nod with a great range of beverage pairing selections. I had the mead which was a real joy to try, mead being the oldest beverage this was sourced from local wild honey. Because of that, the gal ours differ from collection to collection, but mine was a balanced dance of honeycomb, passion fruit beer and wine.
The head chef would visit our table from time to time in between our 10 course adventure, sharing secrets how he prepared and cooked our dishes with a sweet eagerness to see how we enjoyed his creations. Wonderful to see such passion and care in a talented chef.
I really think that this will end up on more exclusive lists as one of the best restaurants in the country - nay, even Michelin grade. I’ve eaten Michelin before and the experience here is comparable.
